It's been quite a while since I've posted in Carole's Concoctions. And, it's not because I haven't been concocting, I have been swamped. Getting Heirloom Meals off the ground requires me to do many things. Blogging, radio interviews, TV show, fundraising, social media etc. And then there's the rest of my life. So, I am trying really hard to be more diligent about writing.
This past Sunday I sprained my ankle and have been sitting with my foot elevated for the past 3-4 days. I didn't feel like cooking but never-the-less, we needed to eat.
I concocted up a pasta with tuna and artichoke hearts that was a keeper. Here's the recipe. I hope you enjoy it!

If you tuned into the middle of this show you would be sure you were hearing the story of someone who grew up in Italy, however, my dear friend Donna grew up right around the corner in Pittsfield, Massachusetts to a Venetian-born father and a mother who was also from Northern Italy. Making Dandelion wine, siphoning vinegar from the barrel in the cellar and stocking up on specialty salame in Springfield were all a routine part of Donna's childhood. Listen in to hear Donna Kresiak reminisce about the age-old practices her parents brought with them from Italy, some of which she continues to do today. Listen in to Donna's show and you might even learn a thing or two about vinegar making!

The chickens were dying to get into the garden to peck around but were just as happy with our wheelbarrow full of weeds and bugs. Chickens really make me smile. Their antics are so entertaining.
