Heirloom Meals: Savoring Yesterday's Traditions Today

Frijoles con Chorizo


Lard or Corn Oil
1 onion, chopped
6 to 8 ounces Pork or Beef Chorizo
2 cups Cooked Pinto Beans

Cotija or Queso Fresco


Pre-heat a large skillet on medium high heat.  Heat a tablespoon of corn oil or bacon fat in the pan.  Add the chopped onions (optional) and cook until softened.  Add chorizo and chop into small pieces with wooden spoon until it’s cooked through, not necessarily browned.  If you are not using lean chorizo, drain the excess fat from the pan before proceeding.  Add cooked pinto beans to chorizo and mash together.  Sprinkle with cheese on top and serve as a side dish warm.
