Are you craving the flavors of summer right about now?  I certainly am.  Fortunately for me, I roasted and froze batches of tomatoes. Combining these with risotto produces the perfect comfort food.

So, when invited back to cook with Dan Bazile, the anchor of the Weekend Show and Tim Drawbridge, the weatherman on Newschannel13, Albany, NY, I just had to make my family's risotto recipe with a kis of summer.
