I so enjoyed interviewing Philip as his story reflects his upbringing. Philip grew up cooking at his mother's side. While there are certainly some recipes he can remember from his past, what remains as part of his heritage is the approach that he learned from his mother. She let the ingredients dictate her menu, not the other way around. So when Philip shops he looks for the quality and seasonality of the ingredients and then enhances and pays tribute to them. He sees it as composing a menu with a balance of fresh ingeredients and textures.
Philip now lives in Los Angeles and is a personal chef, culinary instructor and food and beverage consultant. He also works as a freelance food, wine and travel writer. He writes for Zester Daily.
