Mindy Fox on Heirloom Meals Radio
Mindy Fox says it's no mystery why she's in the food business. Afterall, while she was in the womb, her mother took all kinds of cooking classes. Her childhood brought her to many different places, most notably Vermont where they had a huge vegetable garden and got some sheep. It's also where her Mom started making and selling her special mustard. Mindy traveled to France for her junior year of college and fell in love with the French way of living and eating. Her first French friend, Jean Francois taught her how to make what became a favorite salad: salade d'endive, which can be as simple as endive, good oil, good vinegar, good sea salt and fresh cracked pepper. Occasionally some walnuts and/or blue cheese. This salad inspired her new book: Salads: Beyond the Bowl: Extraordinary Recipes for Everyday Eating.
