6 large artichokes
2 cups homemade breadcrumbs
3-4 Tbsp Olive Oil
Salt and Pepper to taste
1 garlic clove, minced
Cut off the stems and the pointed tips of the artichoke leaves. Wash and drain. Spread
the artichoke leaves.
Mix homemade breadcrumbs with olive oil, garlic, salt and pepper; mix well.
Press about 1/2 cup of stuffing into each artichoke. Tightly pack stuffed artichokes
together in a large heavy saucepan. Add enough water to reach half way up artichokes.
Sprinkle some olive oil over them. Bring to a boil over high heat, then reduce and
simmer, covered, for 1 hour, or until leaves pull out easily.
