Sole with Mustard Caper Sauce
- 1/2 lb Dover or Grey Sole Filets
- 1 Tbsp Capers, Drained
- 1 Tbsp Minced Tarragon
- 2 Tbsp Olive Oil
- 1/4 Cups Dijon Mustard
- Preheat the Oven to 350 degrees.
- Mix the capers, tarragon, olive oil and mustard until well incorporated.
- Clean and dry the filets and place in a casserole baking dish.
- Spread the mustard sauce over the fish and bake for 15-20 minutes.
- Prep time: 10 minutes
- Cook time: 15- 20 minutes
- Total time: 30 minutes
