Stuffed Cabbage

Stuffed Cabbage


2 Tbsp Olive Oil
4 onions, chopped
4-5 carrots, chopped
3 garlic cloves, chopped
2 lbs grassfed chopped meat
2 cups cooked brown rice
Salt and pepper to taste
1 Tbsp paprika
1/2 tsp nutmeg
8-10 Cabbage leaves, tough core removed and blanched
1 32 oz can diced tomatoes


Preheat oven to 400 degrees.
Saute onions and carrots until golden. Add chopped meat and garlic. Cook until aromatic. Add salt, pepper, nutmeg, paprika, 1/2 can of tomatoes and rice. Put an ample amount of meat mixture into one cabbage leaf. Fold in the sides and roll like a burrito and then place in a baking dish. Pour the remaining can of tomatoes on top and bake for 30 minutes.
