Sole with Mustard Caper Sauce
1/2 lb Dover or Grey Sole Filets
1 Tbsp Capers, drained
1 Tbsp Minced Tarragon
2 Tbsp Olive Oil
1/4 cup Dijon Mustard
Preheat the Oven to 350 degrees.
Mix the capers, tarragon, olive oil and mustard until well incorporated. Clean and dry the filets and place in a casserole baking dish. Spread the mustard sauce over the fish and bake for 15-20 minutes.
