Janet Hall’s Blueberry Cake

Ingredients

  • 1 1/2 cup flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 eggs, separated
  • 1/2 cup shortening
  • 1 cup sugar
  • 1/3 cup milk
  • blueberries

Directions

  1. Beat egg whites, set aside.
  2. Cream shortening, sugar, and egg yolks.
  3. Add flour mix alternatively.
  4. Fold in vanilla and egg whites.
  5. Add bluberries. Sprinkle sugar on top.
  6. Bake at 350° for 45 minutes.

  • Cook time: 45 minutes
  • Total time: 1 hour

Yield: 10-12 servings
